You Need this Healthy (+ Paleo-friendly) Mother's Day Menu
/I LOVE holidays where I get to get creative with gifts.
As someone who couldn’t care less about receiving gifts, giving them is one of my favorite ways to show affection.
Getting creative, personal, and unique is what I’m all about!
And Mother’s Day is one of those holidays when I finally like to whip out some “fancy cooking skills,” because most of the time, Mom is cooking for me.
So… let’s change that with a stellar all-day “treat yo’mom” that’s delicious AND good for her.
Paleo Mother’s Day Breakfast
This is always a crowd favorite around my house and for readers.
Meyer Lemon Breakfast Bread.
Not only is it gluten-free, it’s dairy AND egg-free, too. Yeah. Eggs are hard to avoid for Paleo breads, but this baby is vegan!

With a few simple ingredients, you can have a nice & well-rounded meal that brings back some nostalgia of growing up… without the crap.
How about 3-ingredient Chicken Nuggets for your protein:
And for the carb, I always say to opt for a starchy option.
Particularly, a resistant starchy option.
Resistant starch has been shown to help improve satiety, gut health, blood sugar control, and cravings.
I’ve seen plenty of people improve their overall health because of resistant starch… AND they can actually maintain it because it’s not focusing on cutting anything out.
Just adding some good stuff in!
Some resistant starch foods include:
Potatoes (any kind)
Rice (any kind)
Quinoa
Plantains
Yucca
Beans (any kind)
Lentils
Peas

Yep - you should be opting for FULL-FAT salads.
Many of the nutrients found in salads are fat-soluble, In order to digest & use them properly, they need to be bound with fat!
So don’t deprive yourself of this essential nutrient.
I’d say… let’s go Completely Cruciferous Salad with some Tangy Tahini Dressing.

For Mother’s Day meals, it’s all in the thought & details
Look, at the end of the day… you KNOW mom has made WAY more meals for you than vice-versa.
The fact that you’re looking to spend a day pampering her is great, and she’s going to love it no matter what.
But also notice: NONE of these dishes are particularly “hard” to cook. They’re actually all really easy Mother’s Day meals that you can whip up pretty fast.
That was intentional - because at the end of the day, Mom just wants to spend time with you. Don’t feel like you have to go crazy and make some fancy dish - especially if cooking isn’t your forte.
Make something that you’ll enjoy together, put down your phones, and have that time.
It’ll be precious no matter what the meal is!
