Keto-Vegan? Really?

Yeah, I can’t believe Keto-Vegan is a thing, either.

Honestly, this recipe is also Paleo.

May as well hit all of the keywords Google likes, right?

But honestly… I had no idea making a bread that hit all 3 requirements was even possible.

Because typically, you see a vegan bread recipe that’s got gluten, so it’s not Paleo. Or it uses gluten-free grains, making it too high-carb to be Keto.

On the flip side, I’ve NEVER seen an egg-free Paleo bread that’s also still somehow Keto. Usually apple sauce or bananas are the replacements for eggs, kicking us back into the “too high carb” realm.

And when something’s Keto… it’s usually too full or dairy to be either Paleo or vegan.

To say the least, I’m impressed.

Keto Vegan Paleo Avocado Toast

Prep time: 10 minutes

Yield: 4 servings

Ingredients

  1. Thinly slice the loaf of Yez! Foods bread (about 1/2 inch thick, if you can)

  2. Place each slice in the toaster or a toaster oven & cook to desired crispiness. This bread toasts at about the same rate as “regular” bread.

  3. Slather guacamole on top of one side of each toasted slice.

  4. Mince garlic & spread evenly on top of the guacamole (this is the secret! It makes the flavor POP like you wouldn’t imagine!)

  5. Sprinkle on shredded cilantro to top it off & enjoy!

4 cloves fresh garlic, minced

1/4 cup shredded cilantro
