Vegan, Paleo + Keto York Peppermint Patties. They’re real.
Guys, I don’t know WHY I’m so obsessed with York peppermint patties. But they taste like Christmas to me and I have been CRAVING them this season.
So… I finally set out to make a better-for-you version.
And these turned out to essentially be peppermint fat bombs that taste JUST like the candy they’re mimicking.
It might sound difficult to make Paleo / Keto candy, but this recipe is not hard. In fact, I’d call it the opposite of baking.
If you’re in charge of finger foods or a dessert this year, these will fool everyone. Except for the fact that they don’t have wrappers, of course. ;)
Making Keto Peppermint Patties
I went ahead and shot a few “action pictures” while I was creating this recipe, to show you what I mean in some of the directions.
In step 3, I wrote that you need to “dollop the coconut mixture onto a tray and tap them just a bit to get them to flatten out.”
This is what they’ll look like once you’ve helped that minty center “settle” a little bit:
Before you “tap” the coconut globs down a bit, they’ll probably be in weird round shapes.
Make sure they’re relatively flat/round, so it’ll be easier to cover them in chocolate & they can take that “patty” shape.
Next, I also suggested on step 8 to flip the patties over and spread the remaining chocolate mixture on the “bottom” of them, so the coconut is completely surrounded by chocolate.
That might be a little confusing just to read, so… here’s what that looks like:
Again, this will be the side that you serve on the “bottom” of the patty… so it doesn’t need to look perfect.
The “top” portion of the chocolate will be nice & smooth, as you’ll see in the picture below by the recipe.
I promise, it works. ;)
Are these baking measurements right?
I just wanted to address this last thing before we get into the recipe.
Yes, the measurements are right.
Peppermint oil is SUPER strong, so I was shocked at how much I needed to use in this recipe. Apparently, York is blasting the shit out of us with peppermint.
But also… we’re using coconut butter as the main source of the filling. That means there’s an already-existing flavor there that needs to be covered so that we can taste the “York” flavor effectively.
And as for the Stevia, yes. That’s also a lot for how much “filling” we’re making.
But again, York is blasting the shit out of their recipe with sugar. This is truly how much stevia I needed to use to hit that classic flavor.
Okay… no more ado. Here’s that Healthy York Peppermint Patty Recipe!
Keto, Paleo & Vegan Peppermint Patties
Prep time: 30 minutes
Yield: 15 patties
Directions
Ingredients
Place the coconut butter in microwave for 30 seconds, to soften.
Whip coconut butter, vanilla extract, stevia, and 1 Tbsp of peppermint extract together with a spoon. Stir a LOT - you really want to mask that coconut flavor here.
Line a cookie sheet with wax paper & dollop coconut butter in 15 small lumps onto the tray. This will be an odd consistency - you can simply tap the top of each dollop a bit to get it to “flatten out” and look a lot smoother.
Place coconut butter in the fridge to harden.
While coconut center is hardening, melt baking chocolate chips either in microwave in 30 second increments, or on the stove. As they soften, add coconut oil and 1/2 tsp of peppermint extract to this mixture & combine thoroughly.
Remove the coconut from the fridge once chocolate mixture is ready (check to make sure coconut is hard again - it doesn’t take long, so it should be). Place small spoonfuls of the chocolate mixture over the top of each coconut dollop, and gently tap on that to allow it to coat the edges of the coconut. This will use about 2/3 of the chocolate mixture.
Place the tray in the fridge to harden the chocolate.
After 10-15 minutes, chocolate should be solid. Flip each patty over and gently spread a thin layer of the remaining chocolate mixture over the exposed coconut center on this side of the patty. Spread as smoothly as possible.
Place the tray back in the fridge to harden the remaining melted chocolate.
Remove from the fridge when ready to serve, with the “top” chocolate side facing up. Enjoy the delicious minty chocolate flavors of the holidays, with only good-for-you ingredients! :)

1/2 cup semi-sweet baking chips of choice (use Lily’s Brand to keep it Keto)
