The taste of Tuscany in a salad

As I've written non-stop about the simplicity of Italian cooking both on my latest wellness blog post and basically all of my Instagram photos of what I ate here, I won't cover it again in length here.  

But basically if you think the Italian recipe you're making is hard, it's probably not authentic Italian.

Anyway, I took the "minimal ingredients" rule to heart here & created this deliciously refreshing summer salad with the fresh produce I could get any day at any open-air farmer's market around town.  

It's fast, easy, delicious, and way simple!

Summer Crunch Salad

Prep time: 10 minutes   Cook time: None   Total time: 10 minutes

Yield: 2-4 servings

Directions

Ingredients

  1. Cut the melon, cucumber, and avocado as listed in the ingredients. Mix all the pieces together in a large bowl until well-combined.

  2. Drizzle half of the olive oil over the salad & sprinkle on half of the salt. Stir thoroughly & repeat with the other half of olive oil and salt. Serve and enjoy!

1 cantaloupe melon

1 cucumber

1 avocado

1 Tbsp olive oil

1 tsp sea salt
