If you're like me, you think the dough is the best phase of a cookie's life and the best form to enjoy it in. Yes, I love fresh-baked cookies, but there's just something about the unique texture and coolness of raw cookie dough that you can't find in anything else. Here's a guilt-free, Paleo, and vegan way to indulge every now and then, without feeling bad that nothing made it into the oven!
Purely Cookie Dough

Ingredients
1. Melt coconut oil in the microwave on the stove over medium-low heat. It won't take very long, and you don't want it to boil, so keep an eye out!
2. Mix together all ingredients, except chocolate chips.
3. Once a dough-like consistency is formed, fold in the chocolate chips.
4. Store in fridge for 10-15 minutes to allow dough to firm up, then enjoy!
1 1/2 cups almond flour/meal (I used the leftover meal from my Nut Milk)
1/3 cup coconut oil
1/3 cup maple syrup
2 Tbsp honey
1 tsp vanilla extract
Pinch of sea salt
1/3 cup chocolate chips (I use Enjoy Life brand) or cacao nibs
