What happens when you have a crap ton of plantain chips (not complaining) and Meaty Marinara Sauce needing to be used before you travel to Europe?  This, obviously.

Pizza Frito Pie

Prep time: 5 minutes   Cook time: 10 minutes   Total time: 15 minutes

Yield: 1 serving/2-cup mason jar

Directions

Ingredients

  1. Preheat oven to 350ºF and shred cheese.
  2. In a 2-cup/1-pint mason jar, layer 1/2 of the plantain chips, topped with 1/2 of the sauce, topped with 1/2 of the shredded cheese.  Repeat this layering order again. 
  3. Bake for 10 minutes, or until cheese on top AND in the middle of the jar is melted.  Allow to cool before eating it out of the jar (the glass will be hot), or dump it into a bowl to eat right away!

1 cup Meaty Marinara Sauce

1/3 cup plantain chips OR Tostones

2 oz full-fat, grass-fed cheese (I use Kerrygold Dubliner) or cheese substitute
