Mug cakes used to be a huge thing in the fitness world like, 3 years ago.  Someone figured out that if you put a few ingredients into a coffee mug, mix them up, and throw them in the microwave they magically whip into the perfect little treat for one.  They're essentially a single cupcake for when you want something different, so I have no clue why they died down!

While there is some debate on microwaving your food, I don't like to dwell on too many "what-ifs."  I cook most of my food on the stove and in the oven, so a mug cake treat now and then is A-OK with me!  As far as convenience and moderation goes, you just can't beat a mug cake.

It also just so happens that I've been playing around with Vital Proteins products a lot lately, if you haven't already caught onto my obsession.  So when I was reminded that St. Patrick's Day was coming up, something told me the Collagen Beauty Greens just needed to be used!  What would be better than satisfying a treat craving while still somehow getting a helping of supergreens and gut healing at the same time?

Plus, it's kinda pretty.

In case anyone had a doubt about where I shoot my photos, it's on my back porch.  That little snail man was hanging out and decided to photo bomb.  So much for never revealing my secrets! ;)

But like, aren't snails kinda good luck signs?  They somehow survive despite being incredibly slow and almost always smaller than anything else they encounter.  He was more than happy to model for me and I thought he was super cute!

Lucky Green Mug Cake

Ingredients

  1. In a coffee mug, mix together all ingredients except coconut butter with a fork, to make sure the egg yolk breaks up.
  2. Microwave for 2 minutes, or until a cake consistency puffs up in the mug.
  3. Turn the mug upside-down on a plate and the cake should fall right out!  Drizzle coconut butter on top (you may need to melt it a little) and feel the luck! ;) 

1 scoop Vital Proteins Collagen Beauty Greens

2 Tbsp almond meal

1 Tbsp coconut flour

1 egg yolk

3 Tbsp almond milk

1 tsp vanilla extract

1/2 tsp granulated stevia (adjust to taste)

Pinch of sea salt

Pinch of baking soda

2 Tbsp coconut butter
