I've been playing around with the idea for this recipe for a while, tweaking and drinking and tweaking some more.  When Vital Proteins sent me a crap ton of Collagen Peptides, I knew I was going to secure this recipe once and for all!  

I like sipping on this during a morning workout and it's great to make quickly and take on the go in the morning.  It provides a host of health benefits, from the gut healing of the collagen to the multivitamin effects of the egg.  I just love it so much and I'm glad I finally got a winner combination to make it!

Egg Nog Cappucino

Prep time: 5 minutes   Cook time: 5 minutes   Total time: 10 minutes

Yield: 2 large coffee mugs, 1 large to-go coffee tumbler

Ingredients

  1. Bring almond milk to a simmer over medium heat in a small pot on the stove while coffee is brewing.  Continue simmering until coffee is done.
  2. CAREFULLY add all ingredients to Nutribullet or other blender of choice and blend until smooth.  Pour into two mugs to serve or into your to-go tumbler to keep it warm throughout your morning!

 

 

 

 

 

 

 

12oz hot brewed coffee

1 cup almond milk

2 scoops Vital Proteins Collagen Peptides

1 egg yolk

1 tsp clarified butter/ghee

1/2 tsp cinnamon, plus more for sprinkling after

1/2 tsp vanilla powder

1/4 tsp nutmeg

1/4 tsp ground cloves

Pinch of sea salt

Optional:

Up to 1 Tbsp maple syrup or other sweetener of choice
