Ah, the classic love treat.  These are a favorite delicacy of mine for several reasons, those being:

  1. Chocolate.
  2. Strawberries.
  3. Eating the extra dipping chocolate after the strawberries are covered.

I guess the texture is pretty cool, too.  But there's a slight tweak in this version versus what you might consider a "rudimentary" chocolate-covered strawberry recipe.  I won't try to make myself sound like the inventor of this variation; my extra ingredient is not a huge secret and many people use it in their method for making these beautiful simplicities.  But it's also still new to mainstream health converts and therefore I think a good piece of advice to share for making the perfect little indulgence.  Enjoy... and don't be afraid to send a few extras my way when you make these! ;)

Chocolate-Dipped Strawberries

Yield: Around 25 strawberries

  1. Melt chocolate chips and coconut oil in a method of your choosing - either 30 second intervals in the microwave, stirring between each, or on the stove over low heat.  Either way, be sure to stir and check often so you don't burn the chocolate!  Pour chocolate into a bowl or cup that allows for easy dipping access.
  2. Using a toothpick stuck into each strawberry, dip and spin the berries one at a time into the chocolate mixture until covered in the chocolate.  Allow excess chocolate to drip back into the dipping bowl and then place each strawberry onto a parchment paper-lined cookie sheet.
  3. Once the chocolate has solidified all the way, the berry should remove easily from the parchment paper and be ready to serve on whatever pretty display you choose!  Or, you know, eaten voraciously right away.  No judgment here.

1 lb organic strawberries, rinsed and stems removed

3/4 cup chocolate chips (or baking chocolate) of choice, I use Enjoy Life Brand semi-sweet

2 Tbsp coconut oil
